  1、芋頭去皮洗淨切條,肉洗淨切條,将肉條用腌料(料酒1湯匙、澱粉1湯匙、鹽1克、食用油約1/4湯匙)腌制1小時。

  2、将裹料(炸粉30克、面粉10克、清水适量)加水調成糊。

  3、鍋中放油,油溫6成熱下芋頭條、肉條(裹上糊)炸熟,撈出控油。

  4、鍋中留底油将調料(花椒20粒、八角1個、香葉2片、小茴香少許、辣椒絲、燈籠椒、蔥段、姜片、蒜瓣各适量、豆瓣醬1湯匙、白酒3克、白糖1克)炒香,放上炸好的芋頭和肉,翻炒均勻即可。
