醋粉是醋渣、面粉做的。醋粉是陝西西府地區獨特的傳統特色美食，用醋渣和面粉制作而成。
醋渣是釀醋後剩下的一些發酵後的糧食殘渣。這些糧食一般是小麥、大麥、高粱等等。殘渣經過處理後，會做成一種非常好吃的食品——醋粉，做法和涼皮相似，但原材料大不相同，味道非常好，而且，營養價值是高于涼皮的。
隻不過由于原料難得，在西府之外的其他地區很難見到。
