幹花菇怎樣做餃子餡

  1、肥瘦比例約為3:7的五花肉用刀剁成肉末,放入大腕,加入适量鹽、姜末、雞精、1個雞蛋;

  2、用筷子朝一個方向将肉與調料攪拌均勻;

  3、花菇洗淨泡發,擠幹多餘水分,切成細末;(泡花菇的水留用)

  4、泡花菇的水加1大勺耗油、适量生抽、老抽、糖,拌勻成耗油汁;

  5、将耗油汁分次用勺子加入肉末中,用筷子朝一個方向攪拌;

  6、拌好的肉末粘稠且有彈性,說明肉已将耗油汁均勻吸收(這樣餃子餡吃起來才比較勁道,還能出湯汁~);

  7、将花菇末用适量食用油拌勻,然後倒入肉末中;

  8、将花菇末與肉末攪拌均勻,餃子餡即成。
