  1、先要在水中浸泡一晚上把牛蹄筋裡含腥臊味的物質泡出來,焯水要冷水,加入花椒大料等,鍋開後再放入白酒去掉腥臊味,大火炖煮一個小時小火焖煮兩個小時以上才能讓牛蹄筋變軟。

  2、蹄筋加白酒2湯匙,蔥、姜适量焯水,中小火煮5-8分鐘除腥,買來的牛蹄筋裡面有鹽,腥味也較大所以需要多煮一會兒除去腥味和一部分鹽分即可。
