  1、準備白蘿蔔1條,鹽100公克。

  2、白蘿蔔表皮洗淨,切去頭尾,用刀均分成16個長條。

  3、将白蘿蔔條撒上鹽,用手拌勻,靜置1天至出水,再搓揉出多餘水份。

  4、再以重物壓作法2的白蘿蔔條壓3天,取出放至竹篩上曬約3~4天至完全幹透,再放入罐中密封保存,保存數年至顔色變黑,即為陳年老菜脯。
