  1、涼白開的量決定了蛋羹的老嫩程度,水越多蛋羹越嫩(也别太多啊,太多了就不成形了)。

  2、打勻蛋液很重要,如果不打均勻,蛋羹顔色黃白相間,賣相就不好了。

  3、蒸制的時間取決于蛋液和水分的多少,而且最好不要用生水來蒸蛋羹,冷水入鍋蒸近20分鐘至蛋液表面凝固後關火焖3分鐘。
