  1、糖色糊了是沒有補救措施的,為避免苦味加重馬上加點水,或在烹調的時候加點姜片和醋或者料酒,有助于蓋住苦味,但是效果都不顯著。

  2、最好可以用清水把外層糖色煮掉,重新加工。

  3、炒糖色要注意一定是熱鍋涼油,用小火熬制融化,不然很容易炒糊發苦。
