  1、首先将鯉魚刮鱗,去頭、鳍,去尾,洗淨待用;

  2、然後用刀順魚脊骨将魚剖成兩半,去掉大骨,再斜刀改成小塊,用姜、蔥、鹽、醋、醬油、料酒腌30分鐘。

  3、做魚時依次加入适量醬油、料酒、醋、鹽、白糖、味精,最後下魚、加水(水量要低于魚的水平)。
