  1、鳝魚肉斜刀切成4厘米長的段;

  2、茄皮洗淨切塊;

  3、大蒜剝淨皮,蔥姜切片;

  4、鍋中放油燒熱,茄皮下鍋稍炸,撈出,鍋中餘油倒出,留适量,把鳝魚和蒜一同下鍋煸炒;

  5、待水分将幹并發出啪啪響聲時把蔥、姜放入,烹入料酒、醬油,添湯,把茄皮、味精、精鹽、胡椒粉一起放入鍋中,燒開;

  6、用小火慢燒,待大蒜燒爛,鳝魚軟嫩時,勾芡即可。
