  1、茄子切條放入碗内,加入鹽攪拌均勻,腌制10分鐘,鍋内倒油,放入蒜末爆香,加入肉末,翻炒均勻。

  2、加入料酒,翻炒至肉末變白,盛出備用,用手把茄子中的水擠出來,鍋内倒油,放入茄子煸炒,表面微黃後,控出多餘的油并推進一邊。

  3、另一邊放入蒜末,豆瓣醬,肉末,和茄子一起翻炒均勻,再加入生抽,水澱粉,收汁即可。
