  1、水和肉的比列是1:2然後用筷子或者蛋抽打上勁,再加入料酒,鹽和少許醬油,一點姜末,蔥,最後加上2個雞蛋清。

  2、下鍋的時候水不能沸騰,大約水溫在80度左右。因為沸騰的水會滾動容易把剛放下去的肉圓滾散,等肉圓表面凝固了以後可以撈出放入冷水中,等全部肉圓成型了以後再一起把它們煮熟。
