  1、材料:魚頭1個、蔥花10g、生姜300g、香蔥150g、剁椒适量、蚝油适量、蒸魚豉油适量、啤酒150g。

  2、魚頭去鱗,從背部均勻破開,去魚鰓、黑膜、打半月花刀洗淨,把老姜、香蔥、魚頭放入水中浸泡15分鐘。

  3、将魚頭反面朝上放在盤中,抹上蚝油、味精、啤酒,然後加入剁椒。

  4、将魚頭反過來反面朝下,均勻抹上以上調料,倒入蒸魚豉油,放于蒸屜蒸熟。

  5、撒上蔥花,澆上熱油,擦淨盤邊即可。
