蘿蔔餅的制作方法

  1、原料:面粉1.5千克,老面500克。配料:白蘿蔔1千克,熟肥瘦火腿500克。調料:熟豬油1千克,味精、白糖、堿各20 克,精鹽50克,胡椒面、芝麻油各10克。

  2、用面粉,加入豬油,混合調制成稀酥面;用面粉,加入老面揉勻發酵。

  3、削去蘿蔔皮,洗淨,切成細絲,用鹽腌一下, 擠出水分。肥瘦火腿切成細絲,與白蘿蔔絲拌合, 加入鹽、味精、糖、胡椒粉、麻油拌勻成餡。

  4、将酵面加堿中和揉勻後, 放在面闆上攤開擀平,抹上稀酥面卷起,手拿兩頭扭兩轉,豎直按平成圓形,包入蘿蔔絲餡,按成平圓形,下入平底鍋兩面煎黃成熟即可。
