  1、用料:鮮牛皮1000克,大蒜30克。

  2、鮮牛皮去淨毛,以堿醋搓洗,入涼浸泡。

  3、過沸水焯過。

  4、入調料慢火煮熟爛。

  5、改刀成條塊。

  6、炒勺上火放入底油,下入大蒜炒出香氣,放入牛皮。

  7、同時入調料,料酒、醬油、胡椒面、白糖、蔥、姜末、湯。

  8、燒至二十分鐘入味,收濃汁出勺。
