  1、将黃豆提前兩小時泡上,香菜切末,蔥白切絲;

  2、茄子洗淨切滾刀塊,塊塊見皮,切好後放在太陽處曬蔫,不要曬幹;

  3、曬好的茄子和泡好的黃豆同時放在炒鍋裡加水煮,水面與茄子持平,快熟時放醬油,鹽調好鹹淡,再煮一下,收汁,待汁濃時起鍋盛盤;

  4、撒上香菜末和蔥絲;

  5、炒鍋上火燒熱,加入香油,放花椒炸出香味,将花椒取出,然後将熱花椒油澆至茄子上即可。
