  1、将魚肉洗淨,除去魚皮及骨刺,橫切成塊。

  2、把魚肉塊加入黃酒與澱粉,拌勻備用。

  3、山藥削去皮,洗淨,切片。

  4、蔥切段、姜切片。

  5、将炒鍋置火上,加入油燒熱,加入蔥段、姜片煸香後,倒入魚塊和山藥片,輕輕翻炒,以防魚片破碎。

  6、加入鹽、味精,炒至魚片及山藥片熟,用濕澱粉勾芡,淋上麻油,略翻炒即成。
