  1、冷水浸泡牛腱子肉。

  2、冷水放肉,花椒,蔥花,姜;開鍋後,2分鐘即可,把肉再焯一下,排除血液滞留物;

  3、焯好的肉,再用涼水再緊一下肉質。

  4、高壓開始,肉塊比較大,所以壓的時間稍長5分鐘;壓好後,在鍋裡浸泡半天,能更加入味。
