  1、将鍋燒熱,下入準備好的砂糖;

  2、倒入相當于糖分量二分之一的清水,用中火燒;

  3、邊燒變攪拌,直至白糖融化;

  4、注意觀察,糖水從大泡泡變成小泡泡,顔色變成淡黃色;

  5、待小泡泡開始變粘稠,顔色會變得更深;

  6、最後顔色從深黃變成淺棕色,小泡泡又變回大泡泡;

  7、顔色明亮,呈棕紅色時就OK啦,這時就可以下入肉或者菜上色了。缺點:需要時間較長,炒出來的糖色亮度相對低一些。
