幹紅辣椒醬的做法和配方

  1、原料:幹辣椒碎250g,幹豆豉40g,泡發幹香菇5-6朵。

  2、配料:麻椒10g,大蒜1頭,蔥姜适量,白酒2大勺,味極鮮2大勺,濃縮雞汁1大勺,食鹽1茶匙,食用油100ml。

  3、将幹淨炒鍋燒熱,放入麻椒翻炒,上色後取出,稍涼用擀面杖壓成花椒粉待用。

  4、将鹽,味極鮮,雞汁加入辣椒碎攪拌均勻腌制待用。

  5、香菇,大蒜,蔥姜切成小塊,與豆豉一起加入料理機,加白酒打成豆豉泥。

  6、鍋再次燒熱,倒入食油。待6分熱時加入豆豉泥,使勁攪拌打散。燒到吱吱冒泡溫度很高時加入腌好辣椒碎,翻炒,等到油炸的噼裡啪啦時即可。冷卻後裝入潔淨密封的玻璃容器内!
