  1、首先把鲩魚宰殺,洗淨,片出兩片大的無刺魚肉,再斜切成厚片;将魚片用蛋清、鹽拌勻;泡青酸菜洗後切段;紅辣椒洗淨切碎;蔥切成蔥花,姜切片,蒜瓣拍松。

  2、鍋内放油燒熱,下入花椒、姜片、蒜瓣炸出香味後,倒入泡青酸菜煸炒出味,加高湯燒沸,下魚頭、魚骨、料酒、鹽、胡椒粉煮沸。

  3、将鍋内湯汁熬出味後,把魚片逐片抖散入鍋。

  4、把另一幹淨炒鍋燒熱,倒入油,把泡椒末煸炒出味後,倒入煮酸菜魚的鍋中,煮熟魚片後加入味精,撒上蔥花即可。
