  1、雞肉剁塊洗淨備用。

  2、鍋燒熱後,放少量花生油,再放入姜和花椒爆香。

  3、放入雞塊翻炒,加蓋。

  4、雞肉炒出的水炒幹後,加入少量老抽、料酒和蔥段、蒜瓣,翻炒幾下後加入開水,水量要沒過雞肉。

  5、加蓋炖,炖的鍋中隻剩一半水時加鹽繼續炖,等到水快炖幹時,加入味極鮮醬油,美味的炖雞肉就可以出鍋了。
