  1、鹌鹑蛋若幹,洗淨,用廚房紙巾擦幹水份,一粒粒的放入高度白酒中,浸泡一分鐘左右,夾出鹌鹑蛋,再放入食用鹽中,周身裹上鹽;

  2、抖落掉蛋身上多餘的鹽,放入保鮮袋,紮緊袋口,輕輕晃動袋子,讓鹌鹑蛋身上的鹽均勻分布;

  3、将紮緊袋子的鹌鹑蛋放入密封的保鮮盒,室溫(20度左右)保存兩周左右,即可出油出沙;

  4、制作好的鹹鹌鹑蛋,吃時,用水煮熟,再放入冷水泡一會,能更方便地剝殼,即可食用。
