  1、原料:豬肥瘦肉350克、甜椒100克、青蒜苗50克。嫩姜20克、水豆粉50克、鹽2克、料酒20克、醬油10克、味精2克、鮮湯25克、素油50克。甜醬20克。

  2、豬肉切成二粗絲(長約5厘米、粗0.3厘米),入碗加水豆粉、鹽、料酒拌勻。甜椒去蒂、籽,切成二粗絲,嫩姜切細絲,蒜苗切3厘米的節。

  3、醬油、料酒、水豆粉、味精、鮮湯裝碗内調勻成芡汁。炒鍋置火上,下油少許燒熱,放入甜椒炒斷生起鍋。

  4、炒鍋洗淨置旺火上,下油燒熱(約150℃),放肉絲炒散,加甜醬炒香,下甜椒、姜絲、青蒜苗合炒,烹入芡汁,炒勻起鍋裝盤即成。
