  1、炒糖色:鍋放底油,加少許白糖熬制,待成深黃色起泡後,加入開水,翻炒。

  2、選用好的紅燒醬油。

  3、盡量不使用高壓鍋,時間短,難以上色。

  4、做好的鹵肉不急于撈出,浸泡一會利于上色。

  5、炒糖色時,用小火慢炒,且糖色應稍嫩一些,否則炒出的糖色有苦味。
