  1、将肉洗淨切成1.5厘米寬、3厘米長的段。蔥、姜均切絲,蒜切片;花椒用水浸泡,揀出花椒,花椒水留用。

  2、用醬油、醋、精鹽、味精、花椒水、白糖兌成味汁。

  3、勺内放油燒至六七成熱時,把肉段用濕澱粉抓勻,逐段放入油内炸至呈金黃色撈出。

  4、勺内放底油,用蔥、姜、蒜炸鍋,倒入肉段,烹上味汁,颠個兒出勺即可。
