  1、鴿子洗淨剁成塊,加入南乳、生抽、生粉拌勻,腌制10分鐘備用;

  2、炒鍋注油燒熱,下入鴿塊煸香;

  3、煸至鴿肉收縮,兩面呈黃色;

  4、另起鍋将姜、蒜苗煸出香味;

  5、放入煸香的鴿肉,淋入廣東米酒,翻炒鴿肉;

  6、爆香鴿肉後,放入栗子翻炒片刻;

  7、轉入沙鍋,加入1碗清水,然後調入叉燒醬;

  8、再調入蚝油拌勻,燒開後蓋上蓋子小火焖制15-20分鐘;

  9、焖至湯汁濃稠,鴿肉酥軟即可。
