  1、食材:

  豬蹄筋300g、紅尖椒50g、食鹽适量、花椒适量、料酒1勺、胡椒粉适量、郫縣豆瓣1勺、老抽1勺、白糖适量、蔥姜蒜适量、水澱粉适量、雞精适量。

  2、步驟:

  (1)将蹄筋下沸水鍋中焯煮片刻,撈出瀝幹水分。

  (2)炒鍋中放油燒熱,下姜蒜絲和紅椒絲爆出香味,下郫縣豆瓣一勺炒出紅油,加白糖調味。

  (3)下蹄筋稍稍翻炒後料酒走邊,下老抽和食鹽調味。

  (4)翻炒片刻加适量清水燒沸後,加蓋改小火燒約半小時。待蹄筋軟糯時改大火收汁,加雞精,胡椒粉提味,放蔥段翻炒均勻,水澱粉勾芡,表面撒上蔥花即可。
